Enjoy a simple dish at home with fresh mussels to please your guests. Using fresh Sligo Mussels is how our Chef Marcin creates an amazing dish for us at the Ocean Sands Hotel. He has shared his simple recipe with us so you can create your own at home.
Sligo Mussels
Serves 4
Preparation time: 10 minutes
Cooking time: 10 minutes
Ingredients
2kg washed fresh mussels (Chef Marcin uses local Sligo mussels)
1 medium onion, chopped quite small
150ml dry white wine
3 cloves of garlic, finely chopped
150ml cream
25g fresh parsley and dill, finely chopped
1 lemon
Method
Tip the mussels into a large saucepan and add the white wine, chopped onion and garlic.
Cook on a fairly high heat until the pan starts to steam, then cover with a lid.
Continue to cook the mussels for about 3 minutes, shaking the pan from time to time to ensure they cook evenly.
Add the cream and bring it to the boil. Then remove the pan from the heat to stop the cooking process.
Stir in the chopped dill and parsley.
To Serve
Divide between four heated serving bowls and add a generous lemon wedge to each.
This is delicious served with brown soda bread or sourdough bread to mop up the sauce.
Don’t forget a big bowl for the empty shells.
